Because neurons die very quickly if the body stops supplying them with nutrients or if they are flooded with blood, which is not without reason separated from the brain by the hemato-encephalic barrier. The death of neurons leads to disruption of the functions for which the dead neurons were responsible. Ideally, a stroke survivor is able to adapt and train other neurons for these tasks, but the reality is usually far from ideal.
